One of the best agroforestry coffee farms in the world - and a favourite of our team - we are thrilled to welcome back Hacienda La Pradera to our selection for the 2025 season, with this delightful washed Castillo, roasted for filter brewing.

La Pradera is an exceptional sustainability-focused farm owned and operated by Oscar Daza in the municipality of Aratoca, Santander. Founded in 1970 by Oscar’s father, Sr. Hector Daza, the Daza family’s focus from the very start was on ecological diversity and conservation. As well as coffee trees, they have planted over 60 acres of shade trees, productive timber trees and complementary crops to establish a truly sustainable agroforesty system.

The 2025 season marks a huge milestone, with Don Oscar achieving Regenerative Organic Certification at La Pradera. This lot we have purchased is one of the first that he has exported under ROC, and we are proud to champion it this year.

Our recommended recipe for Pour Over Brewing at home or in-cafe.

We start with a 60g water bloom for 30 seconds.

This recipe is developed on a Kono 01 Size dripper with Kono 01 filter papers. Other equipment configuration may require slight recipe modification.

One of our favourite producer partners for the past three seasons, Hacienda La Pradera is an exceptional sustainability-focused farm owned and operated by Oscar Daza in the municipality of Aratoca, Santander.

La Pradera was founded in 1970 by Oscar’s father, Sr. Hector Daza, with the conversion of his 100 hectare family farm into a coffee paradise. Hector’s focus from the very start was on ecological diversity and conservation. As well as coffee trees, he planted extensive areas of shade trees, productive timber trees and complementary crops to establish a truly sustainable agroforesty system on the farm.

Since then, La Pradera has weathered periods of market instability and adverse climate conditions, all the while managing to produce only exceptional quality coffee - including rare varieties such as Gesha, Tabi, Mokka, Wush Wush, Maragogype and others - and has developed a set of processing methods and controlled fermentations suited to the varieties and unique climatic conditions in Santander.

Double Washed Process

This Castillo lot was harvested in May 2025 and processed using a Double Washed Fermentation process. Whole cherries are fermented as a 12-hour aerobic (open air) fermentation, before mechanical de-pulping and fermentation in mucilage for 15 hours. Final washing is then performed with fresh water before drying.
